Butternut Squash Pancakes
I made these for breakfast this morning using the beautiful butternut squash that came in my CSA delivery box last Friday. Very simple and tastes like Thanksgiving!
1.5 cups finely chopped or julienned butternut squash
1 cup dry pancake mix (I like Trader Joe's Pumpkin Pancake & Waffle Mix)
1/4 cup egg whites
1/4 cup chopped pecans
1 cup nonfat milk
1 T butter cut into pieces
1 T pumpkin pie spices (cinnamon, ginger, cardamom, mace, nutmeg, allspice, cloves). If you are using a plain pancake mix, then double the spices
Microwave the squash on high for one minute.
Mix all the remaining ingredients together until well combined. Batter should be thinnish.
Add squash to batter and combine.
Heat non-stick skillet and spray with cooking spray.
Use 1/4 cup of batter per pancake.
Top with maple syrup.
Makes 9 pancakes.

Veggie Pizza
Tonight I made veggie pizza for dinner. Here's what I did but feel free to adapt to whatever you like best.
Ingredients:1 Middle Eastern Flatbread, 6" diameter
1/8 cup sliced olives
1/2 cup canned diced fire-roasted tomatoes with green chiles, drained
1/4 cup chopped broccoli (from my CSA delivery!)
2 oz fresh mozzarella
handful of chopped walnuts
fresh ground black pepper
Preheat oven to 350. Place pizza in a pie tin or on a cookie sheet or pizza stone. Top with veggies, cheese & nuts. Bake for 10 minutes, then broil until cheese is melted. Serves 1.
